Noni's Italian Chicken

INGREDIENTS:

  • Chicken (thighs, drumsticks, breasts)
  • Noni’s Garlic Rosemary Oil
  • Noni’s Italian Rub

RECIPE OVERVIEW

  • Prep Time: 5 Min (night before you will cook)
  • Pellets: Premium Fruitwood
  • Cook Time: 16 - 20 Minutes

LET'S GET STARTED

  1. Rinse and dry the Chicken parts
  2. Take a Ziploc bag and fold back the top 2" of the bag (this will keep your bag clean when you add the oiled-up chicken)
  3. In a large bowl or casserole pan, coat the chicken with olive oil, then sprinkle generously with the rub
  4. Add the chicken to your Ziploc bag; then add a little more olive oil and a little more rub to make a “marinade.” KEY - make sure it is all coated
  5. Refrigerate 1-2 days
  6. Remove from refrigerator to bring to room temperature and warm up your grill to 225°
  7. When the grill reaches temperature add the Chicken directly from the marinade to smoker
  8. Let it smoke for 45 minutes (turning once and rotating it around the grill if you have warm spots)
  9. Turn the grill up to 375°
  10. Finish it off by grilling the chicken until it comes to temp; 165° (check with meat probe)

Serve this savory grilled Chicken with a side of Long Grain Rice, our Balsamic Green Beans, or Mom’s Garlic Roasted Corn for a healthy, balanced meal!

Hot & Fast Method:  (for those not wanting too much smoke in their food)  Start your grill at 350° and cook until it’s 165°.
